When the 2014 Michelin guide took away Kong Hans Kælder’s single star, head chef for 17 years Thomas Rode Andersen had already left the restaurant, taking with him his passion for paleo food. A passion which, not surprisingly, couldn’t be combined with the high-carb, sugary legacy of this restaurant. Kong Hans Kælder has now been born again with Mark Lundgaard as new head chef. And what a rebirth: “The King” is back on the throne with a superb classic French cuisine and will, I think, regain at least one star, as one of Copenhagen’s most lavish and luxurious places to dine.
