Thanks for checking Trine, I misleadingly thought there would be sepia or sepia ink in it since it looked similar to " The other Moon of Valencia" dish I had back then (There's a pic on my review http://blindtasting.twoday.net/stories/4243719/). Have a good week.

What a restaurant, and review naturally. It looks like a well thought-out dinner with wonderfully arranged plates. Looks worth a visit.

I completely agree with you on the blindfolded experience. It would be a fun gimmick but I'd rather experience the exceptional creations that each dish often is!

Thank so much for your kind words, Yin!

You are spot on - in fact it was a little too much for what I could comprehend.

Don't think it's a matter of training... ;-) when thinking you and me.

Ah - another fab review means I have the pleasure of more armchair dining with Trine! Certainly sounds like an incredible bombardment of the senses - and aside from satiety of the stomach, when the dishes seem so complex and multilayered; it does make me wonder how much new information my brain can take before it starts to feel overloaded?! Clearly I need more training .... ;)

Thank you, Laurent! I rely on photoshop - and Klaus ;-)
Hope Tokyo is wonderful!

Food Snob, thanks for stopping by!

Hej Lars!
Ah, good to know - have you written about Dos Chielos?

Thanks so much, Alex. I've checked the menu but it doesn't say anything about sepia. Only: "black truffle, braised woodcock leaver (liver?) and black truffle cavoar with wild winter herbs".

Michael,
Thanks very much and thanks to you for comments. I have decided to update maitre d' with Manager.
I very much enjoyed reading your Per Se review. It is exemplary in arguing how you feel about your visit! I like that :-)

Hej Daniel
Mange tak for din hilsen! El Poblet er **.

Thanks so much! Yes, it struck mee too, Chuck that they've managed so many new dishes and only one from 2007.

Thanks for the review - your pictures are, of course, stunning - and provide ample proof that the "seeing" part of dining is important. I'm really surprised that only 1 dish is similar to my meal last year (albeit, they were during different seasons) - I really want to get on a plane right now!

Trine,
Your review is great reading. The photos are very appealing. I understand your point about the fog etc, but a bit of trompe l'oeil is part of modern cuisine. I think it worked for you here in the "truffle." Too bad that the sea urchin course had a pairing that didn't work. It reminds me of the lobster/beet root pairing which was the only one that did not work for me at noma.
Bests,
Michael

Fan-tas-tic Trine !
The pics are wonderful.

The dishes are pure art, really unique and your pics clearly demonstrate the poetic senses of it (these ashes, geez...)

On my wishlist for sure !

Cheers
