Your review is great reading. The photos are very appealing. I understand your point about the fog etc, but a bit of trompe l&#039;oeil is part of modern cuisine. I think it worked for you here in the &quot;truffle.&quot; Too bad that the sea urchin course had a pairing that didn&#039;t work. It reminds me of the lobster/beet root pairing which was the only one that did not work for me at noma.
