However I&#039;ve found it very hard to read an up-to-date review on Ensemble since it was sold by Maarbjerg (what&#039;s he up to now?) &amp; Vestergård and it went from 2 to 1 Michelin Star. Hence &quot;Finally&quot;.It seems they&#039;re a quite classic restaurant in full control of what they&#039;re doing, but for some reason they&#039;ve not been as attractive to me as a lot of other restaurants and I haven&#039;t really been able to figure out exactly why. Maybe it&#039;s due to them changing owners, losing the second star, not reading reviews and actually being classic that have made me select others.However reading your review (except from the crisps!) makes me wonder if it should be worth a visit. I&#039;d rather visit Noma or Geranium again however. Noma because I wasn&#039;t blown away last time and Geranium because it&#039;s been my favourite experience.It was a good read and I bet you enjoyed the Burgundy wines! When lamb doesn&#039;t take like lamb (and you like it) what does it take like? :)Best,
